About Cabernet Sauvignon Grape
A cross-breed of a red Cabernet Franc grape plant and a white Sauvignon Blanc grape plant produced what is now the most popular grape among American wine drinkers: Cabernet Sauvignon. While it originated from Bordeaux, France, Cabernet Sauvignon has become a quintessential international variety that is planted everywhere where wine is made. Used as a straight varietal and as the major grape in many blends, it’s known for its thick, durable skin and has high levels of tannins, which enhances wine age-ability. When oaked, it produces beautiful flavors of vanilla, butter and spices, resulting in wine that is dark in color, dry, full-bodied, with a medium level of acidity and that drinks well with many foods. Cabernet Sauvignon is often used to blend with other grapes, such as Merlot, and created the world’s most famous and highly coveted wine blend: the Bordeaux blend.
About Merlot Grape
Merlot, a grape of French origin, is the second most popular red grape in America, after Cabernet Sauvignon. Winemakers love Merlot grapes because they are easy to grow and quick to ripen.
A versatile red variety that is known for being soft, silky, generous on fruit and low in tannins, this makes Merlot an easy drinking wine that pairs well with a wide range of foods and drinks well on its own. The wine is often said to have a plummy taste and notes of chocolate. Silver Mountain is known for its premium Pinot Noir, Chardonnay produced from its organically-farmed estate vineyard, and its Bordeaux blend Alloy. Handcrafted with a passion for quality, with gentle care, in accordance with Silver Mountain’s wine-making practice, which has always called for careful, gentle handling of the fruit, both in the vineyard and winery. Silver Mountain’s wines possess exquisite, complex flavors that are delicious now and also benefit from aging. The grapes are handpicked, not crushed but de-stemmed, and start the wine-making process with whole berry fermentation. ‘Punchdowns’ are done using a unique air induced process that is gentler on the fruit. Transferring the wine to and from the tanks and into bottles is all gravity fed.
